- Picar finamente el ajo, la cebolla y el jitomate. Partir las zanahorias, ejotes y pimientos morrones en trozos de tamaño similar. Cortar los champiñones en cuartos.


- Calentar el aceite en la paellera. Sofreír la cebolla a que se vea cristalina, agregar el ajo a que suelte su aroma y por último el jitomate. Cocinar hasta que el sofrito se vea cocido.



- Añadir la zanahoria, ejotes y morrones a que cambien ligeramente de color. Agregar los champiñones y mezclar.



- Añadir los garbanzos. Colar el agua infusionada de romero y mezclar con el caldo o agua que ya deberá estar caliente. Esparcir el arroz por encima de las verduras.



- Agregar el caldo caliente, el sobre de condimento y sal al gusto. Mover con cuidado a que todo quede bien mezclado, probar el sazón y agregar más sal si se requiere. Dependiendo el tipo de arroz será el tiempo de cocimiento.

- Llevar a que hierva y ya que soltó el hervor dejar tapado a fuego lento 30 minutos. Añadir los chícharos y el jugo de limón y dejar otros 10 minutos tapado a fuego lento. Destapar y dejar que se termine de evaporar el líquido. Apagar y dejar reposar 5 a 10 minutos. Ahora sí, ¡a disfrutar!
